Clementine almond cake

This slightly sweet cake is just the kind I like to eat, curled up on the sofa watching the snow fall.

When snow falls, I like being inside baking and being cozy. Last weekend it snowed all day Saturday and I was happy to spend it in the kitchen.

After all the holiday meals, I tend to eat lighter for several weeks. My body craves fresher dishes and lighter tastes. Since winter is also citrus time, I find it easy to add these flavors into my meals.

This cake is very light tasting and I highly recommend using orange blossom honey or another light honey. The orange blossom honey will emphasize the citrus flavor. A darker, heavier honey will overpower the cake.

After the snow, there light the next morning was lovely and soft. I rushed out to capture it before the fog rolled in again.

Clementine almond cake

  • 112 g flour
  • 1 TL baking powder
  • 90 g ground almonds
  • 1 egg
  • 125 g light honey (preferably orange blossom honey)
  • 125 g yogurt
  • 75 ml olive oil
  • 2 clementines, grated zest

Icing:

  • 55 g powdered sugar
  • ½ clementine, juice

 

Preheat the oven to 180° C. Grease the bottom and sides of a 18 cm springform pan.

Combine the flour, baking powder and almonds in a large mixing bowl. In a smaller bowl, whisk the egg, honey, olive oil and zest. Add the wet ingredients to the flour mixture and combine well. Pour into the prepared pan and bake for about 30 min, until golden and a tester comes out clean. The the cake cool in pan.

Mix the powdered sugar with the juice to make a glaze. Remove the cake from the pan and place on a plate. Pour the glaze over the cake and let it set before serving.

I thought you were getting snow. I always check your weather and it did show snowflakes, but then I'm never quite sure! It really looks beautiful and I can see you sitting on your sofa, sipping tea and eating that delicious looking cake! I love how you styled the cake, makes me want a piece right now! We had wind on Saturday and Sunday it was almost 80! They say it might rain tonight, but I'm not holding my breath! Have a great week! xoxo
